Down-On-The-Farm Rolls Recipe

Ingredients:

 

2 cups scalded milk

6 tbsp oil

2 tbsp honey

1/4 cup lukewarm water

1 yeast cake

1 tsp vegetized slat

3 cups unbleached rye flour

3 cups whole wheat flour mixed with wheat germ

 

Method:

  • Make a sponge of scalded milk, oil, honey, vegetized salt, and part of rye flour.

  • When cool, add yeast which has been dissolved in the warm water.

  • Now add rest of rye flour and also whole wheat flour.

  • The dough should be as stiff as can be stirred with a spoon.

  • Set to rise over warm water.

  • When light, stir down; and when light again, put in muffin tins.

  • When dough has risen to double original bulk, bake in oven at 375oF to 400oF.
