Ingredients:
2 1/2 to 3 lbs butternut squash
1/2 stick margarine
1/2 cup chopped onion
2 tbsp honey
1 1/2 tsp grated orange rind
1 tsp cinnamon
Method:

Wash butternut squash thoroughly.

Pare: remove seeds and strings, and cut
into pieces.

Cook in small amount of boiling
water until tender, about 15 to 20 minutes.

Drain well.

Mash thoroughly.

Heat margarine in skillet.

Steam chopped onion in margarine until
tender.

Combine steamed onion, mashed squash,
honey, orange rind, and cinnamon.

Mix well and turn into an oiled 1-quart
casserole dish.

Bake, uncovered, in moderate oven (350oF)
about 20 minutes.
