Mashed Baked Squash Recipe

Ingredients:

 

2 1/2 to 3 lbs butternut squash

1/2 stick margarine

1/2 cup chopped onion

2 tbsp honey

1 1/2 tsp grated orange rind

1 tsp cinnamon

 

Method:

  • Wash butternut squash thoroughly.

  • Pare: remove seeds and strings, and cut into pieces.

  • Cook in small amount of boiling  water until tender, about 15 to 20 minutes.

  • Drain well.

  • Mash thoroughly.

  • Heat margarine in skillet.

  • Steam chopped onion in margarine until tender.

  • Combine steamed onion, mashed squash, honey, orange rind, and cinnamon.

  • Mix well and turn into an oiled 1-quart casserole dish.

  • Bake, uncovered, in moderate oven (350oF) about 20 minutes.
