1 cup chopped pecans
1 cup cooked brown rice
1 cup whole wheat bread crumbs
1 cup soy milk
1 tbsp soy flour
1 1/2 tsp vegetized salt
1 tbsp finely chopped parsley
Combine all ingredients.
Shape into cutlets.
Place on oiled cookie sheet.
Brush top with oil, using pastry brush.
Bake in preheated oven at 350oF until golden brown or about 45 minutes.
