Rice 'N' Liver Skillet Recipe

Ingredients:

 

1/2 cup peanut oil

1 lb liver

1 cup uncooked brown rice

3 tbsp snipped parsley

3 sliced carrots

1 sliced onion

2 1/2 cups water

 

Method:

  • In medium skillet, steam liver in peanut oil until crisp.

  • Now put aside.

  • Into a saucepan, put rice, parsley, carrots, onion, and water.

  • Bring to a boil.

  • Add cooked liver.

  • Cover saucepan.

  • Cook 30 minutes or until rice is tender and most of the water is absorbed.

  • Brings out the best in iron-rich liver and has a unique and piquant flavor for those how usually feel liver-shy.
