Spanish Rice A La Siesta Recipe

Ingredients:

 

6 tbsp vegetable oil

1/2 cup uncooked, natural brown rice

1/2 cup chopped green pepper

1/2 cup chopped onion

2 cups tomato wedges

1/3 cup water

1/4 tsp sweet basil

1/4 tsp oregano

1/8 tsp paprika

 

Method:

  • Heat vegetable oil in saucepan.

  • Add rice, green pepper, and onion; cook, stirring occasionally, until vegetables are tender.

  • Add tomatoes, water, sweet basil, oregano and paprika.

  • Cover and simmer until rice is tender and all liquid is absorbed about 15 to 25 minutes.

  • Serve fragrantly hot.
