Tomato Provencal Recipe

Ingredients:

 

3 large, firm tomatoes

1/4 cup soy margarine

1/4 cup fine, whole wheat bread crumbs

2 cloves garlic, minced

1 tbsp chopped parsley

 

Method:

  • Cut tomatoes horizontally in half.

  • Place cut side up, in shallow baking dish.

  • Melt margarine.

  • Stir in bread crumbs, minced garlic, chopped parsley, and spoon mixture onto cut surface of tomatoes.

  • Bake in moderate oven (350oF) about 30 minutes.

  • Serve steaming hot.
