Creole Stuffed Peppers Recipe

Ingredients:

 

6 large green peppers

1/2 cup chopped onion

1 tbsp peanut oil

2 cups dived fresh tomatoes

2 cups sliced fresh okra

2 cup fresh corn kernels

 

Method:

  • Cut slice off the top of each pepper.

  • Remove seeds.

  • Parboil in boiling water in covered saucepan 5 minutes.

  • Cool.

  • Steam onion in peanut oil.

  • Add remaining ingredients and cook until thickened.

  • Fill in peppers with the cooked mixture.

  • Place in an oiled baking dish.

  • Bake in a preheated, moderate oven (350oF) about 30 minutes or until done.
