1 envelope unflavored gelatin
1/4 cup cold water
2 cups strawberries, crushed
1 tsp grated lemon rind
1/3 cup lemon juice
3 egg whites
Soften gelatin in cold water.
Combine crushed berries, lemon rind, and lemon juice; blend well.
Dissolve softened gelatin over hot water.
Blend into berry mixture.
Chill until mixture begins to set.
Add egg whites and beat until mixture is foamy.
Pour into a lightly oiled, 1-quart mold.
Chill until set.
