Pioneer Millet Bread Recipes

Ingredients:

 

2 cups lukewarm water

2 packages dry yeast

1 tbsp sea salt

1/3 cup vegetable oil

1/3 cup molasses

1 cup millet flour

1 cup oatmeal

3/4 cup gluten flour

1/4 cup brewer's yeast

2 cups whole wheat flour

1 cup unbleached white flour

 

Method:

  • Into a large bowl, put the water, yeast, sea salt, oil, molasses, and brewer's yeast.

  • Stir in all the flour.

  • Knead well, then turn into oiled bowl, cover and let rise.

  • When light, knead again and set aside to rise.

  • When light, shape into loaves.

  • Cover and when risen to just above tins, bake at 350oF about 1 hour.
