Unleavened Muffins Recipes

Ingredients:

 

1/2 cup whole wheat flour

1/2 cup soy flour

1/3 cup honey

1/2 cup raisins

2 tsp lecithin

soy milk (to make batter drop from spoon)

 

Method:

  • Mix all ingredients together (except soy milk) and beat batter well.

  • Refrigerate overnight.

  • Have very cold.

  • Preheat muffin tins piping hot and drop batter by spoonfuls into oiled cups.

  • Bake at 400oF until golden brown.
