1 cup cooked, mashed carrots
1/2 cup honey
1 cup melted shortening
1 egg, well beaten
2 cups flour
1/2 tsp sea salt
1 tsp vanilla
1/2 tsp lemon juice
Method
Cream shortening with honey.
Add egg and carrots.
Mix and sift flour and sea slat.
Add to first mixture.
Add remaining ingredients.
Bake for 12 to 15 minutes in hot oven, 400oF.
Optional: sprinkle with raw sugar.
