1 cup soy flour
1 cup unbleached white flour
1/2 cup raw sugar
1 tbsp lemon extract
grated rind of one lemon
1/2 cup vegetable oil
4 tbsp milk
2 tbsp lemon juice
Method
Mix all together and roll out onto a cookie sheet, about 1/4 inch thick.
Cut with a cookie cutter.
Place an cookie sheet and bake for 10 minutes at 350oF.
Makes about 4 dozen cookies and can be refrigerated.
