Better Baked Salmon Salad Recipes

Ingredients

1 lb salmon

2 cups cooked brown rice

1 cup thinly sliced celery

1/2 cup chopped parsley

1/4 cup sliced, pitted, ripe olives

1/2 cup natural mayonnaise or salad dressing

2 tbsp French dressing

2 tbsp lemon juice

2 tbsp soy mayonnaise

Method

  • Drain and break salmon into large pieces.

  • Combine rice, celery, parsley, olives, and salmon.

  • Combine mayonnaise, French dressing, and lemon juice.

  • Add this mixture to salmon; toss lightly.

  • Place in 6 well-oiled casseroles or custard cups.

  • Top each with a teaspoon of soy mayonnaise.

  • Sprinkle with paprika.

  • Bake in a hot oven, 400oF for 15 to 20 minutes or until heated.
