Fillet of Sole Bonne Femme Recipes

Ingredients

4 to 6   fillets of any fish

1 cup   apple cider vinegar

1   small onion, chopped

1/4 lb   mushrooms, sliced

1 tsp   chopped parsley

sea salt to taste (after cooking)

1 tbsp   soy flour

1 tbsp   vegetable oil

 

Method

  • Lay fillets in a small, oiled baking pan.

  • Pour apple cider vinegar, then onion, mushrooms, and parsley over fillets.

  • Let stand for 60 minutes before putting in preheated oven set at 325oF.

  • Bake for 20 minutes.

  • Lift out fillets.

  • Pour vegetable oil in saucepan.

  • Add flour.

  • Add juice from pan.

  • Simmer until thick.

  • Pour over fillets.
