Skyscraper Fish Chowder Recipes

Ingredients

1 lb fish fillets or steaks

1/2 cup chopped onion

2 cups boiling water

1 lb tomatoes, in wedges

1 cup diced potatoes

1/2 cup diced carrots

1/2 cup chopped celery

1/4 cup tomato juice

1/4 tsp thyme

chopped parsley

 

Method

  • Remove skin and bones from fish.

  • Cut fish into 1-inch pieces.

  • Steam onion until tender.

  • Now add water, tomatoes, potatoes, carrots, celery, tomato juice, and seasonings.

  • Cover and simmer for 40 to 45 minutes or until vegetables are tender.

  • Add fish.

  • Cover and simmer for 10 longer or until fish flakes easily when fork-tested.

  • Sprinkle with parsley.
