Cole Slaw Recipe

There is a way to eat cole slaw and get away with it without adding weight or stomach distress.

 

Ingredients

 

1 tbsp chopped sweet red pepper

1 tbsp chopped sweet green pepper

1 small head white cabbage

1 small head red cabbage

8 sprigs parsley

1/3 cup olive oil

3 tbsp apple cider vinegar

1 tbsp celery seed

1/2 cup yogurt

 

Method

  • Wash cabbage; remove cores and cut on a shredder or with a sharp knife into fine shreds.

  • (Makes about 1 1/2 quarts).

  • Cut parsley into pieces.

  • Peel and chop onion fine.

  • Mix parsley, onion, shredded cabbage, and red and green pepper.

  • Add olive oil, vinegar, and celery seed to cabbage and mix well.

  • Serve topped with a spoonful of yogurt
