Salad May Be One Course or a Main Meal

You may use salads for just one course to precede the meal and prepare digestive juices for thorough eating enjoyment; or you can add meats, fish, eggs, cheese, etc., to the big salad bowl and make it an all-purpose meal in itself. For this reason, some salads presented need cooking. A rule of thumb is to eat raw vegetables when they are palatable in the raw state. Cook vegetables that must be cooked. A raw salad before your noon meal and another raw salad for your evening meal helps improve your health. Alternate between raw vegetables and fruits salads. Vary the dressings to make each salad taste different.
