Odds N Ends Vegetable Soup Recipe

This is a wonderful way to take vegetables if you have not discovered or appreciated their full value. Those who shun vegetables will find this soup to be a wonderful introduction to the goodness of natural foods.

 

This special soup is highly recommended because it is rich in valuable nutrients of the outer and odd leaves and vegetables, that might otherwise be tossed away.

 

Ingredients:

 

2 cups sliced carrots

2 cups sliced turnips

1 sliced onion

2 cups green pea pods

Odd celery stalks and tops

Outside lettuce leaves

Outside cabbage leaves

Odd asparagus stalks

Broccoli leaves and stems

Sprigs of parsley

2 ripe tomatoes, sliced

 

Method:

  • Wash all vegetables.

  • Discard wilted parts.

  • Slice and place in large kettle.

  • Cover with cold water.

  • Bring to a boil.

  • Simmer for 2 hours.

  • Strain, season, and serve.
