Pot O' Gold Soup Recipe

Ingredients:

 

1/4 cup margarine

2 cups chopped celery leaves

1 cup shredded carrots

3 tbsp whole grain flour

2 cups of water or vegetable liquid

3/4 cup evaporated or top milk

Pinch of sea salt

 

Method:

  • Melt margarine and add celery leaves and carrots.

  • Cover and cook over low heat about 5 minutes.

  • Add flour and sea salt.

  • Blend and let simmer 2 minutes.

  • Add water or vegetable liquid, stirring constantly until thick.

  • Now add milk.

  • Bring to just the boiling point and serve golden rich and graciously good.
