Scandia Fruit Soup Recipe

Ingredients:

 

1/2 cup quick-cooking tapioca

2 cups cooked prunes

1/2 cup raw sugar

2 large, tart apples

3 sticks cinnamon

Juice of 2 lemons

2 cups pitted cherries

1 glass berry juice

 

Method:

  • Cook tapioca in 2 quarts water until half done.

  • Add prunes, sugar and apples.

  • Stir vigorously.

  • Now add cinnamon, lemon juice, cherries, and berry juice.

  • Add more water if this fruit soup is too thick.

  • Stir and remove cinnamon sticks.

  • now cook until tapioca is done.

  • Serve fragrantly hot.
