Vitamin Vigor Soup Recipe

Ingredients:

 

1/3 cup brown rice

1/4 cup hulled barley

1/4 cup oats (steel cut, rolled, or groats)

1 cup diced celery

3 cups chopped potato

1 cup chopped carrot

1/2 cup chopped onion or green onions

1 cup tomatoes

1 cup fresh garden peas

1 cup fresh garden lima beans

2 tbsp chopped parsley

1 cup chopped zucchini or seasonal squash

2 tbsp vegetable oil

 

Method:

  • Into a large saucepan, pour 2 quarts of water, rice, whole barley, and oats.

  • Let cook.

  • Add vegetables when grains are soft.

  • When almost done, add parsley.

  • Cook 10 minutes.
