Banana Scallops Recipes

Ingredients

 

8 bananas, peeled

1 egg, well beaten

1/2 cup whole grain bread crumbs, fine

1 1/2 tsp sea salt
 

Method

  • Cut bananas in 1-inch slices.

  • Dip in mixture of egg and sea salt.

  • Drain, then roll in bread crumbs.

  • Bake on oiled sheet for 2 minutes or until brown.

  • Serve very hot.

  • Has the tart and delectable taste of scallops but, as you note, it is entirely fish-free.
