Ingredients
8 bananas, peeled
1 egg, well beaten
1/2 cup whole grain bread crumbs, fine
1 1/2 tsp sea salt
Method

Cut bananas in 1-inch slices.

Dip in mixture of egg and sea salt.

Drain, then roll in bread crumbs.

Bake on oiled sheet for 2 minutes or
until brown.

Serve very hot.

Has the tart and delectable taste of
scallops but, as you note, it is entirely fish-free.
