Meatless "Meat-Tasting" Stew  Recipes

Ingredients

 

2 tbsp vegetable oil

1/4 cup green pepper slivers

3 cups cooked garbanzos (chick peas)

1/2 cup small onion rings

1 1/2 cups stewed tomatoes

 

Method

  • Wash garbanzos.

  • Add twice as much cold water as the beans and let soak overnight.

  • Cook in same water in heavy covered stainless steel kettle for 6 hours.

  • Simmer onion rings and peppers in oil for 3 minutes.

  • Add stewed tomatoes.

  • Let simmer only a few minutes to draw out the "meat" flavor, then add to garbanzos.

  • Stir and serve.
