Meatless Roast  Recipes

Ingredients

 

2 cups diced, stale whole wheat bread

2 tbsp vegetable oil

4 tbsp chopped onion

1 cup chopped walnuts

2 cups steamed, natural brown rice

1 raw egg

2 tbsp whole wheat flour

2 chopped, hard-boiled eggs

2/3 cup chopped, ripe olives

2/3 cup diced celery

1 1/2 cups milk

vegetized salt to taste

 

Method

  • Put the flour and oil in a small saucepan and stir over the fire until of a light golden color.

  • Add the onion and celery; stir a few moments.

  • Add 1/2 cup milk and stir smooth.

  • Add remainder of milk; bring to a boil.

  • Season to taste.

  • Pout over the diced bread and let stand until cold.

  • Beat the egg and mix all ingredients except rice (which is folded in last), using a fork. Press lightly into several oiled bread tins and bake at 350oF until lightly browned on top.

  • Serve plain or with cranberry sauce or gravy, or with both.
