Sweet Potato Cutlets Recipes

Ingredients

 

1 cup chopped nutmeats

2 cups chopped, boiled sweet potatoes

1 tbsp vegetable oil

1 egg

1/2 tsp vegetized salt

 

Method

  • Mix all ingredients together, using potatoes while still warm.

  • Pack mixture into a loaf pan and set in refrigerator to chill.

  • When cold, remove easily from mold.

  • Slice into cutlets.

  • Dip slices in mixture of egg and crumbs and brown in the oven.

  • Serve either plain or with tomato juice sauce to complete "meat" picture.
