Baked Codfish with Grapefruit Recipe

Ingredients:

 

1 1/2 cups codfish

1 small grapefruit

2 tbsp grapefruit juice

2 tbsp corn oil

1/2 tsp vegetized salt

paprika

1 1/2 tsp chopped parsley

 

Method:

  • Place fish in a shallow baking dish.

  • Section grapefruit; drain well, saving 2 tablespoons juice.

  • Pour grapefruit juice and corn oil over fish.

  • Sprinkle with vegetized salt and paprika.

  • Bake in a moderate oven 375oF for 30 minutes or until fish flakes easily with a fork, basting occasionally.

  • Sprinkle grapefruit sections with paprika and arrange on top of fish; sprinkle with chopped parsley and bake 10 minutes longer.
