Ingredients:
2 large, ripe tomatoes
1 tbsp mined scallion
1 tbsp minced parsley
Method:

Slice tomatoes in half.

Place each half on large square of
double-thick foil.

Sprinkle with minced scallions and
parsley.

Bring foil loosely up and around tomato
half.

Seal edge of foil, but leave spare at
top for steaming.

Bake at 350oF for 20
minutes.

Serve steaming fragrant.
