Pink Poached Peaches with Cottage Cheese Topping Recipe

Ingredients:

 

1 cup water

1 thin slices of lemon peel

3 whole cloves

1/2 tsp allspice

6 whole, ripe peaches (blanched and peeled) *

1/2 cup berry juice

 

Method:

  • Combine water, lemon peel, and spices.

  • Bring to boil.

  • Add peaches and berry juice.

  • Simmer gently until peaches are tender but still firm.

  • Cook in berry juice.

  • Serve well chilled with cottage cheese topping.

  • You can cook fresh pears or apples in much the same way.

  • Peel, core, and cut in half before blanching.

  • * To blanch ripe peaches, plunge in boiling water for 1 minute, then in cold. Skins will then slip off.
