Ingredients:
1 cup water
1 thin slices of lemon peel
3 whole cloves
1/2 tsp allspice
6 whole, ripe peaches (blanched and
peeled) *
1/2 cup berry juice
Method:

Combine water, lemon peel, and spices.

Bring to boil.

Add peaches and berry juice.

Simmer gently until peaches are tender
but still firm.

Cook in berry juice.

Serve well chilled with cottage cheese
topping.

You can cook fresh pears or apples in
much the same way.

Peel, core, and cut in half before
blanching.

* To blanch ripe peaches, plunge in
boiling water for 1 minute, then in cold. Skins will then slip off.
