1/3 cup finely chopped Chinese cabbage
1 cup crisp bean sprouts
1/3 cup chopped celery
1/4 cup chopped green onion
1 cup tender China peas
Lettuce leaves
Mix together all ingredients, except lettuce.
Place lettuce leaves on salad plates or platter.
Turn salad onto lettuce leaves.
Pour any desired dressing over this main dish.
Bean sprouts may steamed 10 minutes and then chilled if one is unaccustomed to the superior raw bean flavor.
