Unfired Bean Cutlets Recipe

Ingredients:

 

1 cup thick beans or peas

1 finely shredded onion

3 sprigs parsley, minced fine

1/4 tsp soy sauce

 

Method:

  • Mash beans (whether limas, split peas, pintos, garabanzos, navy beans, etc.) into a creamy consistency.

  • Then mix in the other ingredients.

  • Drop by spoonfuls into a plate of whole grain bread crumbs.

  • Roll into shape of cutlets.

  • Put on oiled pan.

  • Slip under the broiler for just a few seconds to brown the crumbs.
