Ingredients:
4 to 6 fillets of any flat fish
1 cup tarragon vinegar
small onion, chopped
1/4 lb sliced mushrooms
1 tsp chopped parsley
sea salt to taste (after cooking )
Method:

Lay fillets in a small, oiled baking
pan.

Pour ingredients over fillets and let
stand for an hour before putting in preheated oven set at 325oF.

Bake 20 minutes.

Lift our fillets.

In saucepan, melt 1 tablespoon of
butter or margarine.

Add 1 tablespoon of flour; stir.

Add juice from pan slowly.

Simmer until thick and pour over
fillets.

Season with sea salt after cooking.
