Oven-Flavored Baked Beans Recipe

Ingredients:

 

1 lb pea beans, washed

6 cups water

1 small bay leaf

2 cups mashed tomatoes

1/2 cup raw sugar

1/2 cup chopped onion

1/4 cup vegetable oil

 

Method:

  • In a kettle, put beans, and bay leaf.

  • Cook until nearly tender, about 60 or 75 minutes.

  • Drain and reserve 1 1/2 cups of bean liquid.

  • To make more, add additional water.

  • Now combine cooked beans, mashed tomatoes, raw sugar, and chopped onion.

  • Pour into an oiled 2-quart casserole.

  • Lastly, add the reserved bean liquid.

  • Pour vegetable oil over mixture.

  • Bake in slow oven (325oF), about 3 hours or until done.
