Natural Salt SubstituteThe gourmet cook has a variety of natural salt substitute. In addition to sea salt and kelp, there are many unusual herbs and spices that create new flavors to excite the eater. To add interest to salt-free dishes, there is: allspice, caraway, chili powder, coconut, curry, ginger, home-prepared horseradish, lemon or lime juice, mustard seed, peppermint, saffron, and tarragon, to name just a few. Tempting salt-free dishes: For a new taste in asparagus, sprinkle the tips and stalks with nutmeg. To give a thrilling flavor to cucumbers, slice them thin and marinate in tarragon vinegar. For an exotic dish, try eggplant baked with tomatoes, bay leaf, and oregano. To bring out the true goodness of vegetables, try green beans with nutmeg or savory; boil onions in clove and thyme; unsalted peas are delicious with sprinkles of chopped or powdered mint. For bringing out the real, juicy-good flavor of meats; to stew or goulash, add bay leaf, sweet paprika, rosemary, or oregano. Rub lamb chops with freshly ground ginger just before broiling. Before cooking roast beef, put a large ;ay leaf in the roasting pan. Let it remain throughout the cooking process. As for veal chops, rub them with saffron and ground paprika before simmering them in oil to which you've added a little water; as for veal stew, it unites wonderfully with onion, bay leaf, powdered mace, and celery leaves.
